Chef Darius Washington on Cooking His Grandmother's Food, Building Community in Roswell, and Why He Will Never Chase a Michelin Star

I spent six years in kitchens where the goal was to take familiar ingredients and make them unrecognizable — foam this, deconstruct that, put it in a test tube. And I learned a tremendous amount. I am grateful for every minute of it.

But I kept coming back to a question I could not shake: what food actually moved me when I was growing up? What made me want to cook in the first place? And the answer was never a tasting menu. It was my grandmother's kitchen on a Sunday after church. Collard greens that had been cooking since before I woke up. Cornbread that did not need anything on it.

I wanted to do that food justice. Not elevate it — it does not need elevation. Just do it as well as it can be done.

Cash flow and silence. The cash flow issues — unexpected equipment repairs, a supplier who doubled their price three weeks in, a front-of-house hire who did not show up for their second shift — those were stressful but manageable. You solve problems in kitchens. That is the job.

The silence was harder. The first two weeks, we would have nights with four covers. Six covers. I would look out from the kitchen and see empty tables and just have to trust that we were doing something real. My partner kept saying you have not given anyone time to find you yet. She was right. By week six we had a line out the door on weekends.

Because that is how my grandmother cooked. You cooked what was good right now. What the season gave you. What the market had. There was no such thing as a permanent menu — there was what was available and what she knew how to do with it.

Operationally, yes, it is harder. My kitchen team has to be genuinely skilled, not just good at executing the same 12 dishes. But that standard makes us better every week. And it keeps me honest. I cannot hide behind a signature dish.

People tell me they bring their out-of-town family here when they want to show them what home feels like. That is the highest compliment I can imagine.

Roswell is a city with deep roots, but it has also changed enormously in the last decade. A lot of longtime residents feel like the places that made it familiar are disappearing. I want Soulful Kitchen to be one of the anchors — somewhere that feels like it belongs here and has always belonged here, even though we are only a few years old.
